Whole duck foie gras (Foie gras de canard entier) “mi-cuit” infused with Phuket’s local “Chalong Bay – fine cane spirit” (rum) created the traditional island way with natural sugar cane. Finished with a seasoning of Hua Hin sea salt and cracked black pepper.
Tasting note: A subtle sweet flavour for a fine balance.
Tasting suggestions: Remove from fridge and keep at room temperature (20°C to 25°C) for 5 min before tasting. Best served on fresh or toasted artisanal bread. Do not spread. Season to taste with freshly ground sea salt & black pepper. Wine: dry or slightly sweet white.
