How to cook a sausage

Always cook sausages from room temperature, never from frozen.

There are numerous ways to cook sausages, but the general rule is to cook them long and slow until they are just cooked. Too long, and like any piece of meat they can be dry and tough.  Too fast, and the natural sausage skins can burst.


Pan / Griddle pan frying

Pan frying is one of the best ways to cook a fresh sausage.  Just make sure the pan is on a very low heat.  To pan fry, add a little oil, place sausages in and slowly cook for 20-30 mins, turning regularly.



To grill a sausage place under medium grill for 20 mins, turning regularly.


Oven baking

Although not the best way to cook a sausage as they can easily dry out, it is the easiest.  Just place them on a baking tray with a little oil and place in the oven for 20 minutes at 170 celsius, turning once or twice to make sure they brown evenly.



My personal favourite way to cook a sausage is over natural coals on a BBQ.  Once the coals are glowing nicely, but not too hot, place them on the BBQ and turn them regularly for 15-20 minutes.



Sausages are great to braise in stews etc... especially meaty French and Spanish styles as the strong flavours add depth to the entire dish.
