Materials: brown sugar, malted rice
For the first time in the industry rice malt was not used in shoji brewing but "Imo Koji (potato malt)" was used instead by breeding Koji-mold on potatoes. Thus potato shoji (Kogane Sengan) was born. You can taste sweet potatoes from this shoju and it is characterised by a very sharp flavour. The sweetness of sweet potatoes increases when mixing with hot water. You can enjoy it on the rocks to raise the sharpness and also the taste will be very refreshing.
