I am so happy I found this product! Imported grass-fed beef is sold at a few of the local grocery stores, but it is insanely expensive (like twice as much as Passion charges), and it's not even not particularly amazing. But this beef has a good amount of fat, so it's tender (but not mushy) and very flavorful. It's also not full of excess water, so you don't end up with poached shoe leather if you try to sear it on the stovetop.
We had these au poivre style in a surf'n'turf dinner: seasoned both sides generously with coarse salt (let stand at least one hour), add a bit of garlic powder and a heavy coating of cracked pepper on one side, sear in a very hot skillet about 4-5 min on the plain side, maybe 3 min on the peppered side for med-rare, let rest 5 min (while pan-searing some of those excellent Hokkaido scallops from Passion Delivery). Added a side of sautéed Brussels sprouts... Great meal!
